Moroccan Rishbond sweet Recipe
Ingredients:
- 100g sugar
- 130g oil
- 1 lemon peel (yellow part only)
- 3 eggs
- 1/4 tsp salt
- 7g vanilla sugar
- 7g lemon flower sugar (optional)
- 1 Tbsp apricot jam
- 2 Tbls corn starch
- 10g baking powder
- 330g-400g flour
Topping Ingredients:
- 300g apricot jam
- Half lemon juice or 50g blossom water
- 250g shredded coconut
Preparation Steps:
1. Grind sugar and lemon peel in a mixing bowl for 10 seconds at speed 10. Repeat if needed.
2. Add eggs, oil, salt, apricot jam, vanilla sugar, and blossom flower sugar. Mix for 30 seconds at speed 4.
3. Add corn starch, baking powder, and 300g flour. Mix for 10 seconds at speed 4.
4. Check texture and add extra flour if needed. Mix for 5 seconds at speed 4. Repeat until right texture is achieved.
5. Form small balls and place in a baking pan. Bake at 350°F (180°C) for 10-15 minutes until golden. Let cool.
6. Warm jam and lemon juice (or blossom water) to 90°C. Grind for 10 seconds at speed 10 if needed. Pour warm mixture over cooled cookies and mix well.
7. Place two cookies together, then coat in shredded coconut. Repeat with remaining cookies.
8. Store in an airtight container until ready to serve.
Tips:
- Dough should be mixed just until ingredients are blended.
- Dough will look loose but should form balls easily.
- Make about 45 balls.
