Dough Ingredients:

- 250g thin semolina

- 250g all-purpose flour

- 1 tsp salt

- 1/2 tsp yeast

- 1 Tbsp sugar

- 350g water

*Knead for 6 to 8 min


Stuffing Ingredients:

- 250g to 500g ground beef

- 1 large onion

- 150g bell pepper

- Half bunch cilantro

- Half bunch parsley

- 50g olive oil

- 1 tsp salt

- 1 tsp black pepper

- 1 tsp paprika

- 1/2 tsp turmeric

- 1 tsp sumac (optional)

- 1 tsp cayenne (optional)


Dough Spreading and Folding Ingredients:

- Oil (as needed)

- Melted ghee (as needed)

- Paprika 1tsp

- Thin semolina

First, mix half a cup of oil with half a cup of melted ghee and 1 tsp of paprika. Use as needed, and add more if required. Sprinkle thin semolina as needed.

Preparation Steps: 

1. Place thin semolina, all-purpose flour, salt, sugar, yeast, and water into the Thermomix bowl. Knead for 6-10 minutes.

2. Separate the dough into six equal balls. Apply oil to each ball, cover with plastic wrap, and set aside.

3. Prewash tThermomix  bowl with the dough option, then rinse and dry it.

4. Place cilantro and parsley into the Thermomix bowl. Chop for 3 seconds at Speed 8 or use the Turbo function. Transfer the chopped herbs to a bowl and set aside.

5. Add bell pepper and onion to the Thermomix bowl. Chop for 3 seconds at Speed 4. Then, sauté for 8 minutes using a Cookidoo sauté recipe or 10 minutes at 120°C, Speed Spoon.

6. Add ground beef to the Thermomix bowl. Sauté for 8 minutes using a Cookidoo sauté recipe or 10 minutes at 120°C, Speed 1.

7. Add spices and salt to the Thermomix bowl. Mix for 3 seconds at Speed 4.

8. Add the chopped cilantro and parsley to the Thermomix bowl. Mix with a spatula.

9. Let the filling cool completely before proceeding.

10. Mix half a cup of ghee, half a cup of oil, and 1 tsp of paprika in a bowl.

11. Spread one of the dough balls with the spreading mixture until you can see the work surface through the dough. Apply some spreading mixture, sprinkle with thin semolina, and place the cooled filling in the middle. Fold the dough over the filling in the shape of msemen.

12. Repeat Step 11 with the remaining dough balls, placing each prepared msemen on top of the previous one and fold.

13. Apply the spreading mixture to a baking half-sheet oven pan, sprinkle with thin semolina, and place the large msemen on top. Cover with plastic wrap and let it rest.

14. Spread out the msemen until it becomes half an inch thin.

15. Bake the msemen in a preheated oven at 180°C (350°F) for about 25 minutes, until roasted from top and bottom.

16. Serve hot with hot Moroccan tea and enjoy!
